Chimichangas (Baked) |

1 medium onion, chopped
1 small can diced green chilies
3 lbs cooked, shredded, chicken
½ can tomatoes, drained and diced
Oregano, to taste
Salt, to taste
Pepper, to taste
1 Tbsp sugar
12 flour tortillas
¼ cup margarine
1½ cups cheddar cheese, shredded

| Instructions: |
Sauté onion
and green chilies in 1 tsp water. Add shredded chicken and drained
tomatoes; simmer 30-60 minutes. Add seasonings to taste and sugar.
While filling is simmering, lightly butter both sides of tortillas.
Fill each tortilla with about ¼ cup filling, top with 2 Tbsp
shredded cheese; roll burrito-style. Place seam side down on cookie
sheet and bake @ 350 degrees for 15-18 minutes.
