Mexican Rice

2 cups long grain white rice
3 cups water
1-8oz tomato sauce
dash of Tabasco sauce
1 tablespoon white vinegar
½ bay leaf
dash of cumin
dash of sage
1 tablespoon olive oil
peas & carrots (optional)





Instructions:
Fry rice in oil until it begins to toast. Add water, tomato sauce and the remaining ingredients, except peas & carrots. Stir 5 minutes in full boil. Simmer covered 20 minutes. Add peas & carrots, if desired.
