Pea Soup |
| 2 qts Water |
| 1 Ham Hock |
| 1 Large Onion Chopped |
| 2 Chicken boullion cubes |
| 1/2 tsp garlic powder |
| 1/2 tsp oregano |
| 1/2 tsp pepper |
| 1 Bay Leaf |
| 1-1/2 cups sliced carrots |
| 1 bag Split Peas |

| Instructions: |
In
a large pot combine peas, water, ham, onion, bouillon and seasonings.
Simmer, uncovered for 1½ hour. Remove ham hock; trim meat
off bone and return to pot. Stir in carrots and celery. Simmer,
uncovered 2 more hours. Add milk and cooked rice to finished soup,
if desired, and serve.
Note: There are different
versions of this recipe. Some substitutions can be made.
