Split Pea Soup
2 qts Water
1 Ham Hock
1 Large Onion Chopped
2 Chicken boullion cubes
1/2 tsp garlic powder
1/2 tsp oregano
1/2 tsp pepper
1 Bay Leaf
1-1/2 cups sliced carrots
1 bag Split Peas
 
Instructions:
In a large pot combine peas, water, ham, onion, bouillon and seasonings. Simmer, uncovered for 1½ hour. Remove ham hock; trim meat off bone and return to pot. Stir in carrots and celery. Simmer, uncovered 2 more hours. Add milk and cooked rice to finished soup, if desired, and serve.

Note: There are different versions of this recipe. Some substitutions can be made. Contact Jeff and Vicki for their version. It's a little quicker.
